Quick “Gourmet” Breakfast/Brunch

Sometime before Mother’s Day, I was looking up possible brunch recipes to possibly use for a gathering.  I came across this fairly easy but fancy looking breakfast/brunch idea. I call this “Gourmet Ham and Egg Tart”, although you can make this with turkey as well.


Here’s what you’ll need:

Standard Cupcake or Muffin Tin

Thin Sliced Deli Meat (Ham, Turkey, Prosciutto)- 1-2 slices per serving

Large Eggs: 1 per serving

Cherry Tomatoes: 1 per serving

Shredded Mozzarella Cheese: abt 1 tbsp per serving

Cooking Spray or Olive Oil

Here’s how you do it:

Preheat oven to 350 degrees

Spray cupcake pan with cooking spray or wipe with small amount of olive oil

Line the cupcake tray with deli meat (the sliced meat will serve as the “cupcake wrapper”

Put shredded cheese into cupcake well

Crack whole egg directly into cupcake well

Add cherry tomato on top of egg

Bake for approx 20-25 minutes or until egg is set.

Run a butter knife around the edges of each “cupcake” and they will pop right out

These little tarts are so easy- and take just about as much time as cooking up a batch of pancakes or french toast- with about half the effort!!
