Bringing the South up North!

I have discovered a great recipe for cornbread that’s easy and fast!! Perfect as an add-on for dinner or as a snack the next day.  Uses ingredients you usually have hanging around your kitchen.




1 Cup All Purpose Flour

3/4 Cup Yellow Cornmeal

3 TBSP Sugar

2 1/2 TSP Baking Powder

3/4 TSP Salt

2 Large Beaten Eggs

1 Cup Milk (I use whole milk)

1/4 cup vegetable oil

1 TBSP Butter


1. Preheat Oven to 400 degrees

2. Place 10 inch Cast-Iron Skillet into preheating oven

3. Mix together dry ingredients in a medium sized bowl

4. Place butter in warmed skillet until melted, then use butter to coat bottom/sides of pan; remove from oven

5. In a separate bowl, combine milk, eggs and oil.

6. Add egg mixture all at once into dry ingredients.  Mix until moistened. Do not overmix!

7. Pour mixture into buttered skillet and place in oven for 15-20 minutes.

Cornbread is done when toothpick or knife inserted into center comes out clean.

Let bread cool in skillet- once cool it will come out all at once and you can slide it onto a plate to serve.


I cooked this tonight with a turkey-cheese meatloaf as the entree. Comes out great each time I make it!
